This beginner-friendly smoked brisket recipe is simple, mouthwatering, and perfect for those new to the art of smoking meat. A printer-friendly recipe card is located at the bottom of this post.

How to Make Smoked Brisket

Ingredients:

  • 1 whole beef brisket (10-12 pounds)
  • 1/4 cup kosher salt
  • 1/4 cup coarse black pepper
  • 1/4 cup paprika
  • 1/4 cup brown sugar
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 2 tablespoons chili powder
  • 1 tablespoon cayenne pepper (optional)
  • Wood chunks or chips for smoking (hickory, oak, or mesquite)

Instructions:

  • Trim excess fat from the brisket, leaving a thin layer for flavor and moisture.
  • In a small bowl, mix together the salt, pepper, paprika, brown sugar, garlic powder, onion powder, chili powder, and cayenne pepper (if using) to make the rub.
  • Generously coat the brisket with the rub, covering all sides evenly. Use your hands to press the rub into the meat.
  • Wrap the brisket in plastic wrap and refrigerate overnight, allowing the flavors to penetrate the meat.
  • Preheat your smoker to 225°F (107°C) and add wood chunks or chips for smoke flavor.
  • Place the brisket fat side up on the smoker rack and close the lid.
  • Smoke the brisket for 1 hour per pound, or until the internal temperature reaches 195-205°F (90-96°C) in the thickest part of the meat.
  • Remove the brisket from the smoker and let it rest for at least 30 minutes before slicing against the grain and serving.
